Well my lovely mother told me this really simple, easy to cook recipe so I decided to pass it on! Its pretty simple.
All you need is:
1. 500 g of boneless chicken breasts, chopped into small pieces
2. Ginger Garlic Paste
3. 3 medium sized onions, grated or ground in a mixer
4. Salt to taste
5. Half a tsp of red chilli powder. You could use dried red chillies as well. They are tastier. Don’t use more than 2 though!
6. Half a cup of rice (basmati is the best)
7. Half a cup of coconut milk (packaged)
8. Cinnamon to garnish
9. Non – stick pan and a pressure cooker
10. Cooking oil
So let’s make the chicken first.
Take around 1 tbsp of cooking oil and add the grated onions to it on a low flame. Keep cooking till the onions turn light pink in color. Now add the ginger garlic paste and let it cook for another minute. Simple, right?
Now add the chicken pieces to this and cook it till the chicken is almost 80% done. You can cover the pan and let it cook in its steam, its faster that way.
Now you’ll be like “Ladyhawk how do I know if the chicken is done?”
Well I usually check for 2 things: one, the chicken pieces should have turned into a light cream/white color on both sides and they should be the same on the inside as well!
Now take around half a cup of water, add around one tsp of salt and the chilli powder/red chillies and let this cook on a low flame. Cover the pan.
While the chicken is cooking you can work on the rice as well. Take 2 cups of water and add it to the pressure cooker along with one tsp of salt. Add one and a half tsp of oil and heat this on a low flame for a minute. Now add the rice to it, cover the cooker and let the rice cook on a low heat till the whistle blows. Usually one whistle is enough, but you may want to open the cooker and check this once just to be sure. If not, let it cook for a little bit more.
Now don’t forget about the chicken you! Once you added the water – let is cook for a few more minutes till you feel its completely done (poke it or taste a piece to be sure). Now right in the end, add the coconut milk. If you want it with extra gravy, you can add more than half a cup, its upto you! You can also add more salt/ chillies if you like more spice in your life!
Now stir this.
Add the corainder leaves to garnish and viola – its ready! :)
